Copenhagen Restaurant
Located on the ground floor of a former Coach House, Copenhagen Restaurant enjoys fine views of St. Peter Port, Castle Cornet and Havelet Bay and serves lunch, afternoon tea, light bites and dinner seven days a week.
Copenhagen serves breakfast, lunch, dinner and snacks in between. The bar is open from 10.30am until 12.45am for drinks, cocktails and coffees.
The name Copenhagen derives from the favourite horse of the first Duke of Wellington, Arthur Wellesley. This brave, chestnut stallion was ridden by the Duke during his greatest victory, the Battle of Waterloo in 1815. The new Bar and Grill still has many nods to its equestrian past. There is also a Scandinavian feel to the interiors which is also reflected with some of the menu offerings.

Gian Luca Pori
Gian Luca originates from Rome and has been at Hotel de Havelet for 24 years.
As you might expect his favourite cuisine is Italian and he is partial to a glass of fizz - Italian, naturalmente!
Gian Luca is a keen fisherman.
Paul Thompson
Paul was born in London and has been working as a chef since he was 17 years old.
His loves football, is a big fan of Tottenham Hotspur, horse racing and has a genuine passion for cooking.
Paul's favourite dish is a classic Chateaubriand with chateau potatoes seasonal vegetables and the traditional accompaniment - bearnaise sauce.
He enjoys the tranquillity of Guernsey, cliff walking with spectacular views, the friendliness of people and the climate that island offers throughout the year.
Ilvars Beitins
Ilvars Beitins is originally from Riga, Latvia, and has been at Hotel De Havelet since 2006.
Cooking for others is a great joy for Ilvars, allowing him to showcase his culinary skills gained over years in the Restaurant industry. His passion is photography and video, and he takes part in e-sport gaming tournaments. French Cuisine is amongst his favourites.
Attila Duro
Attila originally comes from Hungary and has been working at Hotel De Havelet for over 14 years now.
He is a keen cyclist who takes part in various local and international cycling tours and races.
His favourite food is Asian cuisine and he enjoys a glass of fruity cider.
